How to Bake a simple White Almond Sour Cream Cake
Those who have been following me on this blog may have noticed that I like to share cake recipes. I know that cake isn’t exactly as healthy as say, cornbread, but I bet more people would rather eat it right?
While I don’t exactly have a cake recipe that I can call a favorite, I can say that white almond sour cream cake is one of the closest to my heart. And why not? This recipe was one of the first cakes that I was able to bake.
White almond sour cream cake or simply WASC is easy to bake that even novice bakers should be able to pull it off.
It is also light and neutral that it can pair easily with any filling and frosting.
Because of those characteristics, this cake has become a fixture in wedding celebrations. Yes, this is one recipe that you can follow in time for your sibling or child’s wedding (just in case the couple is pressed for time in looking for a cake).
This cake is so versatile that you can alter its flavor. You can go away from the classic white almond and vanilla extract and use another extract like chocolate, coffee or orange. You can even try lemon or lavender.
You are also not limited in your choices for filling and frosting for this cake. Berry fillings would work well. You can also use raspberry and strawberry.
Also, why not try lemon? It can give the cake a nice and light option, while complementing the almond flavor.
This cake is sturdy enough to hold up to carving, which makes it ideal for use as a wedding cake.
Whipped cream filling and frosting is best for cakes with a light overall texture like this. Buttercream may also be used. It can also go well with vanilla or sour cream.
You can also pour a thin layer of chocolate ganache over the top of the cake. This should be a great foil to the fluffy texture inside this cake. Or place some raw almonds around the cake’s base.
As you can see, there are many flavors that you can incorporate in this cake.
White almond sour cream cake recipe
As I mentioned earlier, there are many ways to decorate this cake. I’ll share with you how to decorate it with cream cheese frosting.
You will need the following ingredients:
- 3 cups of softened cream cheese
- 1 cup and ½ tablespoon of unsalted butter
- 1 ½ cups of sifted powdered sugar
Step by step guide
Add butter and sugar in a stand mixer bowl. Cream together by using the paddle attachment. Continue until the mixture has become smooth and shiny.
Add the cheese and mix thoroughly for 2-3 minutes. You now have a frosting that you can use to decorate the cake. If you are not to use this immediately, then I suggest you refrigerate it until needed.
